Fresh-Frozen Arctic Sweet Shrimp
Arctic sweet shrimp, cooked and left whole with the tail fan on. The shells are a clear pink over translucent flesh, and along the belly of each one sits a thick band of roe — a deep blue-green that turns to a soft teal against the pink.
The flesh is sweet and almost buttery, much softer than a warm-water prawn, and the roe adds a rich, faintly briny note. Eat them as they are once thawed, with soy and a little wasabi, or lay them over rice. If you cook them, keep it to a minute or two — they are already cooked and only need warming.
